At this time last year I had never heard of mast cell activation syndrome (MCAS) and the first time that I heard the name I thought that it was a “made up” disease.
I was diagnosed in 2005 with celiac disease and a gluten-free diet helped me heal from other associated problems including Grave’s Disease. After a long, long time working to heal my gut I’m able to tolerate some gluten-containing grains provided they’re properly prepared: true sourdough bread for instance.
In celiac disease, wheat protein (gluten) in food damages the small intestine, making it hard to absorb nutrients and causing a wide range of symptoms.
